In celebration of Women’s History Month, Disney World has created a new cupcake to celebrate Encanto’s Mirabel. The cupcake can be found at All-Star Movies Resort and Art of Animation Resort. However, if you can’t make it to Disney World to try it, you can make it yourself. Or, if you have tried it and loved it here is the Mirabel cupcake recipe. This is my own version.

Here is Disney Worlds description of the Mirabel cupcake: Cinnamon cupcake filled with custard and topped with coconut buttercream, toasted coconut, and Mirabel-inspired fondant garnishes.

My two passions are baking and Disney World. So, in this post I’m combining my two loves. Now, I haven’t had the chance to taste this yummy cupcake at Disney World. However, my copycat version is delicious. In order to make the Mirabel cupcake you will need to make a few different recipes, the cupcake, custard, and frosting. Also, if you really want to be ambitious, the fondant. However, if you want to save time, buy it in the store.

Cinnamon Cupcake

Ingredients

  • 1 ½ cups (7oz/198g) all-purpose flour
  • 1 cup (8oz/225g) sugar
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • ⅛ teaspoon baking soda
  • 1 teaspoon cinnamon
  • 2 tablespoons (1oz/28g) butter softened
  • ⅓ cup (2 ½ floz/71g) neutral-flavored oil (vegetable, sunflower, canola)
  • 1 tablespoons vanilla extract
  • 2 large eggs
  • 1 egg yolk
  • ¾ cup (6 floz/170 ml) milk

Instructions

  • Preheat oven to 350°F (180°C) and line a 12-cup muffin tin with paper liners.
  • In the bowl of a stand mixer (or in a large bowl with a handheld mixer) combine flour, sugar, cinnamon, salt, baking powder, and baking soda. Mix on low for a few seconds to combine.
  • Add butter, oil, and vanilla extract and blend until combined, scraping down the sides of the bowl once or twice.
  • Add the eggs and yolk, one at a time, and mix on low until fully combined.
  • Pour in the milk and mix on low until thoroughly combined, but take care not to overmix.
  • Scoop batter evenly into the 12 prepared muffin cups and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pan for 10 minutes before lifting onto a wire rack to cool completely.
  • Make a hole in cupcakes by using an apple corer and fill with custard.
  • Decorate the cupcakes with buttercream frosting and fondant decorations.

Coconut Buttercream Frosting

Ingredients

  • 1 cup (226g) butter (softened)
  • 2 cups (226g) confectioners sugar (sifted)
  • 1-2 teaspoons coconut extract
  • 1-2 teaspoons milk or heavy cream
  • Pinch of salt
  • Pink and purple gel paste food color
  • Pipping bag with #824 Ateco tip
  1. In a stand mixer fitted with the beater attachment or using an electric hand mixer beat the butter until light and creamy for about 5 minutes on medium/high speed.
  2. Once the butter is pale in color and light add in the confectioners sugar all at once and start on slow speed to avoid a sugar shower. Let the sugar fully incorporate before turning it on medium to high speed.
  3. Beat on high speed for another 3-4 minutes until very light, creamy, and fluffy.
  4. Add the coconut extract, pinch of salt, and cream or milk. Drizzle milk 1 teaspoon at a time. Add 1 more teaspoon if you want it to be lighter.
  5. Mix for just a few more minutes.
  6. Divide the frosting in half and place in separate bowls. Color one with the pink food color and mix. Add purple food color to the other bowl and mix.
  7. Place plastic wrap flat on counter. Put the pink frosting in a line on the plastic. Then put the purple frosting in a line next to the pink. Wrap the plastic around it to make a log shape (watch video). Cut the end of the pipping bag and place in the tip. Then put in the frosting and frost the cupcakes.

Custard

Ingredients

  • 2 cups whole milk
  • 1 tablespoon vanilla extract
  • ½ cup (100g) granulated sugar 
  • 2 large egg yolks 
  • 1 large egg
  • 1/4 cup (32g) cornstarch
  • 3 tablespoons (42g) butter 

Instructions

  1. In a medium bowl, whisk together egg yolks, whole egg, cornstarch, and 1 tablespoon of sugar.
  2. In a medium saucepan, combine milk, the remaining sugar. Place over medium-low heat until mixture comes to a simmer.
  3. While whisking constantly, slowly pour half of the hot milk mixture into the egg-yolk mixture, until it has been incorporated. This is called tempering the eggs. Pour mixture back into the saucepan, and cook over medium-high heat, whisking constantly, for roughly 2-3 minutes or until it thickens.
  4. Remove from the heat and whisk in the butter and vanilla extract. Pass the mixture through a fine mesh strainer into a storage container to cool down.
  5. Cover with plastic wrap, pressing it directly onto the surface of the custard to prevent skin from forming and allow it to cool down. To cool down faster, place over an ice bath and then place in fridge. Or you can just place in the fridge to cool down. Should be stored at all times in the fridge. 

Marshmallow Fondant

If you’d rather make your own fondant, here is a great recipe. You will need fondant to make the little flowers and butterfly. The fondant needs to be purple, pink and yellow. If you make your own fondant, you will use the gel paste colors to color the fondant.Roll out the fondant and use the fondant cutters to make the flowers and butterfly. Add a little yellow dot to the center of the flowers using the fondant. I realized afterward that I made the butterfly the wrong color. It was suppose to be yellow. So, if you want it to be just like the one at Disney World, make sure the butterfly is yellow.

Toasted Coconut

Toasting coconut is simple. Preheat oven to 325°F. Spread the shredded coconut on a sheet pan in a thin layer. It doesn’t take long to cook, so check it after a few minutes and mix it around and leave it for a few more minutes until lightly browned.

Mirabel Image

The cupcake at Disney World has an edible picture of Mirabel. It might be made from fondant or maybe it’s white chocolate. However, I don’t have a fancy edible ink printer to create images. Therefore, I looked up the image online and copied it to Microsoft word and adjusted the image to the right size. However, I should have made it just a little smaller. I cut out the picture and taped it to a toothpick.

Decorating

The Mirabel cupcake recipe also has toasted coconut around the frosting. Take the toasted coconut and place it on the bottom of the frosting. Then place the flowers and butterfly on the frosting and stick the Mirabel picture in the front of the cupcake. Below are the tools you will need with links.
